What Should I Eat Today?

BREAKFAST: Acai Bowl

Ingredients:

  • 2 frozen bananas
  • 1 cup frozen raspberries
  • 1 cup frozen blueberries
  • 1 tbsp acai powder
  • 1 tbsp coconut sugar
  • 2 cups of almond milk

LUNCH: Rice Noodle Stir-Fry

Ingredients:

  • ½-1 packet of fresh rice noodles
  • 1 onion thinly sliced
  • 1 carrot
  • A handful of shitake mushrooms sliced
  • Bunch of bok choy
  • A few sprigs of green onion
  • 1 cup crispy tofu
  • 2 cups of bean sprouts
  • ½ – 1 cup of water
  • 1 tbsp vegetarian oyster sauce
  • ½ tbsp vegetarian bbq sauce
  • 1 tbsp low sodium soy sauce

DINNER: Baked Sweet Potato / Pumpkin Topped With A Tahini Drizzle / Steamed Corn And Salad

Ingredients:

  • As many sweet potatoes as you desire
  • As much pumpkin as you desire (cubed)
  • As much corn as you desire
  • 4-5 cups lettuce, chiffonade
  • 1 cucumber thinly sliced
  • 2-3 tomatoes sliced up into chunks
  • 1 cup sun-dried tomatoes
  • 2 tbsp tahini
  • Juice of ½-1 lemon or lime for dressing
  • ½ tbsp coconut sugar
  • A few tbsp of almond milk
